About the Author
Audrey Tan is the pastry chef at Saint Pierre, a restaurant well-known for its innovative cuisine. Although she only began as a pastry chef later in life, after 13 years as a flight attendant, Audrey is today recognised for her talent, and has quickly gained a reputation as the one behind Saint Pierre's sumptuous dessert offerings.
Audrey trained at the Orange Coast College in Los Angeles, then took on a 2-year stint at the Ritz-Carlton, Laguna Niguel, working under the pastry chef Jean-Francois Lehuede. She then returned to Singapore to work at Saint Pierre in 2003, during which she had the opportunity to train under Philippe Marand at the world famous Lenotre pastry school in Paris.
